One of Elizabeth Farm's most prized cuts, these chops are beautifully marbled and tender. We filmed this tutorial with Chef Alex Garfinkel of Balboa Catering to properly cook these beauties. Season with salt and pepper and sear on cast iron or grill over charcoal until Medium-Medium Rare (140-145f internal temp). Let rest for 5-10 minutes and enjoy.
