The old classic! Three Springs Fruit Farms, the local leader in low-impact, eco-friendly orcharding, supplies the cider, an ever-changing mix of their own-grown apples selected each week for balance among flavors.  Most apple cider vinegar is fermented quickly using high-tech forced oxygenation, producing a high acid liquid which must be diluted down to a standard level, weakening the flavor in the process.  This low and slow fermentation process yields a vinegar that naturally settles to a 4-5% acidity, meaning we just put the juice in the bottle - no added water.
